When comparing 27.5 vs 29 mountain bike, weight and size will be a primary factor. 29ers are heavier and they are more in contact with the ground. It means that they offer better tractions and control and can roll over obstacles in your path, 27.5-inch wheels are smaller and better in terms of maneuverability.
I have a 29 trail and a 27.5 enduro, I ride the 29er most of the time as it just pedals better and is better equipped for most of the trails in my area. 27.5+ gives you more grip, which is useful in covering difficult terrain even without advanced skill or long travel. This is the easy handling on anything setup. I would choose it as a confidence booster for more difficult trails. 29 rolls better, which saves considerable amounts of energy on long rides.
Hoping the 29 x 2.6 is a better match. I stuck a yardstick behind my 29x2.6 XR4 on an i30 rim and eyeballing it, it's a bit over 29 1/2 inches tall. My 27.5x3 i36 wheel is just a bit over 28 3/4. So about 3/4 inch taller. Figure half of that for rise in BB.

Once you start hitting 3.5" tires were into fat bike territory. But again things very so much just on the tires your comparing. Example: most of what I read was a 29" 2.3-2.3 tire and a 26x 4.7 tire are the same diameter give or take a couple mm. But that's off. My bontrager 29" tires, 2.2 or 2.3 are about the same as my 3.8/4.0 Surly Nate's.
27.5 x 3. Super reliable 27.5+. Teravail’s Coronado tire is a plus-sized 27.5 that will fit on many modern mountain bike frames that aren’t explicitly designed for fat tires. Haven ridden both 27.5+ and 29+ (2.8 and 3.0 tires on both) on both hardtails and rigid, here's my take. At 6'3" I overall prefer 29+, especially now in AZ and in rigid mode. Much better rollover and helps eat up a lot of real rocky/chunky terrain.
